Ingredients:

  • 1 cup (240ml) fresh or frozen cranberries
  • 1 cup (200g) granulated sugar
  • 1 cup (240ml) water
  • 2 cinnamon sticks
  • 4 whole cloves
  • 1 star anise (optional)
  • 1/2 teaspoon ground ginger
  • 12 oz (360ml) good quality gin (London Dry recommended)
  • 6 oz (180ml) fresh lime juice
  • 6 oz (180ml) Spiced Cranberry Syrup
  • 1 bottle (750ml) chilled dry sparkling wine
  • Ice cubes
  • Fresh cranberries
  • Rosemary sprigs
  • Lime wedges

Instructions:

  1. Combine cranberries, sugar, water, cinnamon sticks, cloves, star anise (if using), and ground ginger in a medium saucepan. Bring to a boil over medium heat, then reduce heat and simmer for 10-15 minutes, or until the cranberries have burst and the syrup has thickened slightly.
  2. Remove from heat and let cool slightly. Strain the syrup through a fine-mesh sieve or cheesecloth into a jar or container, pressing on the solids to extract as much liquid as possible. Discard the solids. Let the syrup cool completely in the refrigerator (about 30 minutes).
  3. Fill a cocktail shaker with ice. Add gin, lime juice, and Spiced Cranberry Syrup.
  4. Shake well until the shaker is very cold (about 15-20 seconds).
  5. Strain the mixture evenly into 6 cocktail glasses.
  6. Top each glass with chilled sparkling wine.
  7. Garnish with fresh cranberries, rosemary sprigs, and lime wedges. Serve immediately.
