Ingredients:
- 1 cup (240ml) fresh or frozen cranberries
- 1 cup (200g) granulated sugar
- 1 cup (240ml) water
- 2 cinnamon sticks
- 4 whole cloves
- 1 star anise (optional)
- 1/2 teaspoon ground ginger
- 12 oz (360ml) good quality gin (London Dry recommended)
- 6 oz (180ml) fresh lime juice
- 6 oz (180ml) Spiced Cranberry Syrup
- 1 bottle (750ml) chilled dry sparkling wine
- Ice cubes
- Fresh cranberries
- Rosemary sprigs
- Lime wedges
Instructions:
- Combine cranberries, sugar, water, cinnamon sticks, cloves, star anise (if using), and ground ginger in a medium saucepan. Bring to a boil over medium heat, then reduce heat and simmer for 10-15 minutes, or until the cranberries have burst and the syrup has thickened slightly.
- Remove from heat and let cool slightly. Strain the syrup through a fine-mesh sieve or cheesecloth into a jar or container, pressing on the solids to extract as much liquid as possible. Discard the solids. Let the syrup cool completely in the refrigerator (about 30 minutes).
- Fill a cocktail shaker with ice. Add gin, lime juice, and Spiced Cranberry Syrup.
- Shake well until the shaker is very cold (about 15-20 seconds).
- Strain the mixture evenly into 6 cocktail glasses.
- Top each glass with chilled sparkling wine.
- Garnish with fresh cranberries, rosemary sprigs, and lime wedges. Serve immediately.
