Ingredients:

  • 2 boxes of Jiffy Corn Muffin Mix (each 8.5 oz / 241 g)
  • 2 large eggs
  • 2/3 cup milk (160 ml)
  • 1 cup frozen corn, thawed (150 g)
  • 1 cup shredded cheddar cheese (100 g)
  • 1 small jalapeño, finely chopped (about 30 g)
  • 1/4 cup chopped fresh cilantro (optional)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Grease the baking dish with cooking spray or butter.
  3. In a mixing bowl, combine the Jiffy Corn Muffin Mix, eggs, and milk.
  4. Stir in the thawed corn, shredded cheese, jalapeño, and cilantro until evenly incorporated.
  5. Pour the batter into the prepared baking dish.
  6. Bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  7. Let cool for a few minutes before slicing and serving.
