Ingredients:
- 2 boxes of Jiffy Corn Muffin Mix (each 8.5 oz / 241 g)
- 2 large eggs
- 2/3 cup milk (160 ml)
- 1 cup frozen corn, thawed (150 g)
- 1 cup shredded cheddar cheese (100 g)
- 1 small jalapeño, finely chopped (about 30 g)
- 1/4 cup chopped fresh cilantro (optional)
Instructions:
- Preheat the oven to 400°F (200°C).
- Grease the baking dish with cooking spray or butter.
- In a mixing bowl, combine the Jiffy Corn Muffin Mix, eggs, and milk.
- Stir in the thawed corn, shredded cheese, jalapeño, and cilantro until evenly incorporated.
- Pour the batter into the prepared baking dish.
- Bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Let cool for a few minutes before slicing and serving.
