Ingredients:
- 1 lb (450g) ground beef
- 1 small onion, finely chopped (about 1 cup)
- 2 cloves garlic, minced
- 1 tbsp (15ml) olive oil
- 1 tsp (5g) chili powder
- 1 tsp (5g) ground cumin
- Salt and pepper to taste
- 2 cups (240g) shredded cheese (cheddar or a Mexican blend)
- 1 cup (240g) sour cream
- 1 egg, beaten
- 6-8 corn or flour tortillas
- 2 cups (480ml) salsa verde
- Fresh cilantro, chopped (for garnish)
Instructions:
- Preheat the Oven: Set your oven to 375°F (190°C).
- Cook the Meat Filling: Heat olive oil in a large skillet over medium heat. Add chopped onion and garlic; sauté until soft (about 3-4 minutes). Add ground beef, chili powder, cumin, salt, and pepper. Cook until browned.
- Mix the Cheese Layer: In a mixing bowl, combine shredded cheese, sour cream, and the beaten egg. Set aside.
- Layer the Ingredients: Spread a thin layer of salsa verde in the bottom of a greased baking dish. Place a layer of tortillas over the sauce, followed by half of the meat mixture, half of the cheese mixture, and a layer of salsa verde. Repeat the layers. Top with remaining tortillas, salsa verde, and cheese.
- Bake: Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes, or until bubbly and golden.
- Serve: Let cool for a few minutes, then garnish with fresh cilantro and slice to serve.
