Ingredients:
- 1 cup Mixed Fresh Strawberries & Raspberries (for Red)
- 1/4 cup Simple Syrup (1:1 ratio) (for Red)
- 1/2 Lime, freshly juiced (approx. 1 Tbsp) (for Red)
- 1/4 tsp Rose Water (optional) (for Red)
- 12 oz Chilled Club Soda or Sparkling Water (for Red)
- 1 cup Full-Fat Coconut Cream, chilled (for White)
- 1/2 cup Fresh Lime Juice (for White)
- 1/4 cup Simple Syrup (1:1 ratio) (for White)
- 1/2 tsp Clear Vanilla Extract (for White)
- 8 oz Chilled Club Soda or Sparkling Water (for White)
- 4 oz White Grape Juice (for Blue)
- 1/2 cup Fresh Lemon Juice (for Blue)
- 1/3 cup Simple Syrup (1:1 ratio) (for Blue)
- 1/2 tsp Non-alcoholic Blue Curaçao Syrup (for Blue)
- 8 oz Chilled Ginger Ale or Lemon-Lime Soda (for Blue)
- Cubed Ice
- Crushed Ice (preferred for White)
Instructions:
- Prep Syrups & Juices: Ensure all citrus juices are freshly squeezed. Gently muddle the strawberries and raspberries with the 1/4 cup of simple syrup for the Red mocktail base.
- Make the Blue Base: Combine the White Grape Juice, Lemon Juice, Blue Curaçao Syrup, and remaining Simple Syrup in a measuring jug. Stir well until fully dissolved.
- Make the White Base: In a separate bowl, gently whisk together the chilled Coconut Cream, Lime Juice, Vanilla Extract, and 1/4 cup Simple Syrup until just combined and slightly frothy. Do not over-whisk.
- Assemble Berry Blast Refresher (Red): Add 2 tablespoons of the prepared berry/syrup mixture to the bottom of a chilled highball glass filled two-thirds with cubed ice. Top gently with Club Soda/Sparkling Water. Stir briefly from the bottom up to incorporate the colour slightly.
- Assemble Cool Citrus Cloud (White): Fill a glass with crushed ice. Pour the pre-mixed White Base evenly into the glass. Top slowly and gently with the chilled Club Soda/Sparkling Water.
- Assemble Blue Lagoon Fizz (Blue): Fill a glass with cubed ice. Add the pre-mixed Blue Base to the glass until it is about halfway full. Slowly top with chilled Ginger Ale or Lemon-Lime Soda for maximum fizz and visual layering.
- Garnish all three mocktails appropriately (Mint/Lime for Red, Toasted Coconut/Starfruit for White, Cherry for Blue) and serve immediately.
