Ingredients:
- 2 lbs sweet potatoes, peeled and cubed into 1-inch pieces
- 2 tbsp avocado oil
- 1/2 tsp kosher salt
- 1/3 cup pure maple syrup
- 2 tbsp unsalted butter, melted
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp black pepper
- 1/4 tsp kosher salt
Instructions:
- Preheat oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- In a large bowl, toss the cubed sweet potatoes with avocado oil and 1/2 tsp kosher salt until evenly coated.
- Spread the potatoes in a single layer on the prepared baking sheet, ensuring no two cubes are touching to prevent steaming.
- Roast for 20–25 minutes, flipping halfway through, until the edges are golden and the centers are tender when pierced with a fork.
- While potatoes are roasting, whisk together the melted butter, maple syrup, cinnamon, nutmeg, black pepper, and 1/4 tsp kosher salt in a small bowl until fully emulsified.
- Remove the pan from the oven and pour the maple glaze over the roasted potatoes, tossing them to ensure an even coating.
- Return the pan to the oven for the final 10 minutes to allow the glaze to caramelize into a thick, lacquer-like finish.
