Ingredients:

  • 2 lbs sweet potatoes, peeled and cubed into 1-inch pieces
  • 2 tbsp avocado oil
  • 1/2 tsp kosher salt
  • 1/3 cup pure maple syrup
  • 2 tbsp unsalted butter, melted
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp black pepper
  • 1/4 tsp kosher salt

Instructions:

  1. Preheat oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. In a large bowl, toss the cubed sweet potatoes with avocado oil and 1/2 tsp kosher salt until evenly coated.
  3. Spread the potatoes in a single layer on the prepared baking sheet, ensuring no two cubes are touching to prevent steaming.
  4. Roast for 20–25 minutes, flipping halfway through, until the edges are golden and the centers are tender when pierced with a fork.
  5. While potatoes are roasting, whisk together the melted butter, maple syrup, cinnamon, nutmeg, black pepper, and 1/4 tsp kosher salt in a small bowl until fully emulsified.
  6. Remove the pan from the oven and pour the maple glaze over the roasted potatoes, tossing them to ensure an even coating.
  7. Return the pan to the oven for the final 10 minutes to allow the glaze to caramelize into a thick, lacquer-like finish.
