Ingredients:
- 3 pounds yams, peeled and cut into 1-inch cubes
- 1/4 cup water
- 1/2 cup unsalted butter
- 1 cup packed light brown sugar
- 1/4 cup maple syrup
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/4 teaspoon ground ginger (optional)
Instructions:
- Peel and cube the yams. Place them in the skillet with 1/4 cup water.
- Cover the skillet and cook over medium heat until the yams are tender-crisp, about 10-15 minutes.
- Drain any remaining water from the skillet. Add the butter, brown sugar, maple syrup, cinnamon, nutmeg, salt and ginger (if using) to the skillet.
- Cook over medium heat, stirring constantly, until the butter is melted and the sugar is dissolved. Bring to a gentle simmer.
- Continue to cook, stirring occasionally, until the glaze has thickened slightly and coats the yams evenly, about 5-10 minutes. Watch closely to prevent burning!
- Remove from heat and serve immediately. Garnish with chopped pecans or walnuts (optional).
