Ingredients:

  • 3 pounds yams, peeled and cut into 1-inch cubes
  • 1/4 cup water
  • 1/2 cup unsalted butter
  • 1 cup packed light brown sugar
  • 1/4 cup maple syrup
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground ginger (optional)

Instructions:

  1. Peel and cube the yams. Place them in the skillet with 1/4 cup water.
  2. Cover the skillet and cook over medium heat until the yams are tender-crisp, about 10-15 minutes.
  3. Drain any remaining water from the skillet. Add the butter, brown sugar, maple syrup, cinnamon, nutmeg, salt and ginger (if using) to the skillet.
  4. Cook over medium heat, stirring constantly, until the butter is melted and the sugar is dissolved. Bring to a gentle simmer.
  5. Continue to cook, stirring occasionally, until the glaze has thickened slightly and coats the yams evenly, about 5-10 minutes. Watch closely to prevent burning!
  6. Remove from heat and serve immediately. Garnish with chopped pecans or walnuts (optional).
