Ingredients:

  • 1 box (15.25 oz / 432g) chocolate cake mix
  • 3 large eggs, room temperature
  • 1 cup (240ml) water
  • 1/2 cup (120ml) vegetable oil
  • 2 cups (300g) fresh strawberries, hulled and sliced
  • 1/2 cup (100g) granulated sugar
  • 1 tablespoon lemon juice
  • 8 oz (227g) cream cheese, softened
  • 1/2 cup (60g) powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup (60g) shredded coconut (optional)
  • 1/2 cup (90g) chocolate chips (optional)

Instructions:

  1. In a bowl, combine sliced strawberries, granulated sugar, and lemon juice. Let sit for 10 minutes until strawberries release juices.
  2. Preheat the oven to 350°F (175°C). In a large mixing bowl, combine the chocolate cake mix, eggs, water, and vegetable oil. Beat until smooth, about 2 minutes.
  3. Pour half of the cake batter into a greased 9x13-inch pan. Spread the strawberry filling evenly over the batter.
  4. Prepare the cream cheese layer by mixing softened cream cheese, powdered sugar, and vanilla until smooth; dollop on top of the strawberries.
  5. Finally, pour the remaining cake batter over everything, spreading evenly.
  6. Bake in the preheated oven for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool in the pan for at least 20 minutes before slicing and serving. Optionally, top with shredded coconut and chocolate chips.
