Ingredients:
- 1 box (15.25 oz / 432g) chocolate cake mix
- 3 large eggs, room temperature
- 1 cup (240ml) water
- 1/2 cup (120ml) vegetable oil
- 2 cups (300g) fresh strawberries, hulled and sliced
- 1/2 cup (100g) granulated sugar
- 1 tablespoon lemon juice
- 8 oz (227g) cream cheese, softened
- 1/2 cup (60g) powdered sugar
- 1 teaspoon vanilla extract
- 1 cup (60g) shredded coconut (optional)
- 1/2 cup (90g) chocolate chips (optional)
Instructions:
- In a bowl, combine sliced strawberries, granulated sugar, and lemon juice. Let sit for 10 minutes until strawberries release juices.
- Preheat the oven to 350°F (175°C). In a large mixing bowl, combine the chocolate cake mix, eggs, water, and vegetable oil. Beat until smooth, about 2 minutes.
- Pour half of the cake batter into a greased 9x13-inch pan. Spread the strawberry filling evenly over the batter.
- Prepare the cream cheese layer by mixing softened cream cheese, powdered sugar, and vanilla until smooth; dollop on top of the strawberries.
- Finally, pour the remaining cake batter over everything, spreading evenly.
- Bake in the preheated oven for 40-45 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for at least 20 minutes before slicing and serving. Optionally, top with shredded coconut and chocolate chips.
