Ingredients:

  • 2 ripe mangoes, diced (approximately 400g)
  • ½ red onion, finely diced (approximately 75g)
  • 1 red bell pepper, finely diced (approximately 100g)
  • 1 jalapeño pepper, seeded and minced (approximately 10g)
  • ¼ cup fresh cilantro, chopped (approximately 10g)
  • 2 tablespoons fresh lime juice (approximately 30ml)
  • 1 tablespoon olive oil (approximately 15ml)
  • ½ teaspoon kosher salt (approximately 3g)
  • ¼ teaspoon ground black pepper (approximately 1g)
  • Pinch of cumin (optional) (less than 1 gram)

Instructions:

  1. Dice the mangoes, red onion, red bell pepper, and jalapeno. Chop the cilantro.
  2. In a medium mixing bowl, combine the diced mangoes, red onion, red bell pepper, jalapeno, and cilantro.
  3. Pour in the lime juice and olive oil. Season with salt, pepper, and cumin (if using).
  4. Gently toss all ingredients together until well combined. Avoid overmixing.
