Ingredients:
- 1/2 cup (120 g) Chia Seeds (White or Black)
- 2 cups (475 ml) Almond Milk (Unsweetened vanilla preferred)
- 1/4 cup (60 ml) Maple Syrup (Grade A Dark Robust)
- 1 teaspoon (5 ml) Vanilla Extract
- 1 tiny pinch (0.5 g) Sea Salt
- 1 1/2 cups (225 g) Frozen Mixed Berries (Strawberry, Raspberry, Blueberry blend)
- 1 teaspoon (5 ml) Lemon Juice (Freshly squeezed)
- 1–2 tablespoons (15–30 ml) Water (Filtered)
- Fresh Berries (optional topping)
- Toasted Coconut Flakes (optional topping)
- Granola (optional topping)
Instructions:
- Prepare the Chia Pudding Base: In a medium bowl, whisk together the almond milk, maple syrup, vanilla extract, and pinch of salt until the syrup is fully dissolved. Pour in the chia seeds and immediately whisk vigorously for 1 minute to prevent clumping. Let the mixture sit undisturbed for 5 minutes, then whisk thoroughly again for 30 seconds to redistribute any sunken seeds and break up early clumps.
- Create the Triple Berry Purée: Place the frozen mixed berries, lemon juice, and 1 tablespoon of water into the high-speed blender. Blend until completely smooth. If the blender struggles, add the remaining tablespoon of water, but keep the mixture thick like a sauce.
- Layer and Combine: Pour half of the prepared Chia Pudding Base evenly into four serving jars to form the bottom layer. Pour the Berry Purée into the remaining half of the Chia Pudding Base. Stir well until the pudding base turns a uniform pink/purple colour. Spoon the colourful Berry Chia Pudding mixture over the plain white layer in each jar.
- Chill and Set: Cover the jars tightly and refrigerate for a minimum of 6 hours, or ideally overnight (12 hours), allowing the chia seeds to fully hydrate and the pudding to become thick and scoopable. Before serving, check the consistency; if it seems too stiff, stir in a splash of milk.
- Serve: Garnish each jar with fresh whole berries, a sprinkle of toasted coconut flakes, or a handful of granola just before serving for contrasting textures. Serve chilled straight from the refrigerator.
