Ingredients:
- 2 large kumara (sweet potatoes), peeled and cut into 1/2-inch thick fries (approx. 700g / 1.5 lbs)
- 2 tablespoons olive oil (30 ml)
- 1 teaspoon smoked paprika (5 ml)
- 1/2 teaspoon garlic powder (2.5 ml)
- 1/4 teaspoon cayenne pepper (1.25 ml) (optional, for a kick!)
- 1/2 teaspoon sea salt (2.5 ml)
- 1/4 teaspoon freshly ground black pepper (1.25 ml)
- 1 tablespoon cornstarch (15 ml)
Instructions:
- Peel the kumara and cut them into even fries, about 1/2 inch thick.
- In a large bowl, toss the kumara fries with olive oil, smoked paprika, garlic powder, cayenne pepper (if using), salt, and pepper.
- Sprinkle the cornstarch over the fries and toss well to ensure they are evenly coated.
- Spread the fries in a single layer on a baking sheet, making sure they aren't overcrowded. OR, arrange in the air fryer basket, leaving space between.
- Bake in a preheated oven at 400°F (200°C) for 25-30 minutes, flipping halfway through, until golden brown and crispy. Or, air fry at 380°F (190°C) for 15-20 minutes, shaking the basket halfway through.
- Remove from the oven (or air fryer), garnish with fresh parsley or rosemary (if using), and serve immediately.
