Ingredients:

  • 2 large kumara (sweet potatoes), peeled and cut into 1/2-inch thick fries (approx. 700g / 1.5 lbs)
  • 2 tablespoons olive oil (30 ml)
  • 1 teaspoon smoked paprika (5 ml)
  • 1/2 teaspoon garlic powder (2.5 ml)
  • 1/4 teaspoon cayenne pepper (1.25 ml) (optional, for a kick!)
  • 1/2 teaspoon sea salt (2.5 ml)
  • 1/4 teaspoon freshly ground black pepper (1.25 ml)
  • 1 tablespoon cornstarch (15 ml)

Instructions:

  1. Peel the kumara and cut them into even fries, about 1/2 inch thick.
  2. In a large bowl, toss the kumara fries with olive oil, smoked paprika, garlic powder, cayenne pepper (if using), salt, and pepper.
  3. Sprinkle the cornstarch over the fries and toss well to ensure they are evenly coated.
  4. Spread the fries in a single layer on a baking sheet, making sure they aren't overcrowded. OR, arrange in the air fryer basket, leaving space between.
  5. Bake in a preheated oven at 400°F (200°C) for 25-30 minutes, flipping halfway through, until golden brown and crispy. Or, air fry at 380°F (190°C) for 15-20 minutes, shaking the basket halfway through.
  6. Remove from the oven (or air fryer), garnish with fresh parsley or rosemary (if using), and serve immediately.
