Ingredients:

  • 2 lbs sweet potatoes, peeled and cubed into ½-inch pieces
  • 2 tbsp olive oil
  • 2 tbsp brown sugar, packed
  • 1 tsp kosher salt
  • ½ tsp cracked black pepper
  • ½ tsp smoked paprika

Instructions:

  1. Preheat oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. Peel the sweet potatoes and cut them into uniform ½-inch cubes.
  3. In a large mixing bowl, combine the cubed potatoes with olive oil, brown sugar, salt, pepper, and smoked paprika.
  4. Toss the mixture vigorously until every cube is glistening and the brown sugar has dissolved into a paste-like coating.
  5. Spread the potatoes in a single layer on the prepared sheet pan, ensuring pieces are not touching to prevent steaming.
  6. Bake for 12–13 minutes.
  7. Flip the potatoes with a spatula.
  8. Bake for another 12–13 minutes until edges are mahogany colored and centers are tender.
