Ingredients:
- 2 lbs sweet potatoes, peeled and cubed into ½-inch pieces
- 2 tbsp olive oil
- 2 tbsp brown sugar, packed
- 1 tsp kosher salt
- ½ tsp cracked black pepper
- ½ tsp smoked paprika
Instructions:
- Preheat oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- Peel the sweet potatoes and cut them into uniform ½-inch cubes.
- In a large mixing bowl, combine the cubed potatoes with olive oil, brown sugar, salt, pepper, and smoked paprika.
- Toss the mixture vigorously until every cube is glistening and the brown sugar has dissolved into a paste-like coating.
- Spread the potatoes in a single layer on the prepared sheet pan, ensuring pieces are not touching to prevent steaming.
- Bake for 12–13 minutes.
- Flip the potatoes with a spatula.
- Bake for another 12–13 minutes until edges are mahogany colored and centers are tender.
