Ingredients:

  • 1 tablespoon olive oil (15 ml)
  • 1 pound ground turkey (450g), preferably lean (93/7)
  • 1 medium yellow onion, chopped (about 1 cup)
  • 1 red bell pepper, seeded and chopped (about 1 cup)
  • 1 yellow bell pepper, seeded and chopped (about 1 cup)
  • 1 orange bell pepper, seeded and chopped (about 1 cup)
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • ½ cup tomato sauce (120ml)
  • 2 tablespoons apple cider vinegar (30ml)
  • 1 tablespoon brown sugar, packed (15g)
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon Dijon mustard

Instructions:

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add ground turkey to the skillet and cook, breaking it up with a wooden spoon, until browned. Drain off any excess grease.
  3. Add chopped onion and bell peppers to the skillet. Cook, stirring occasionally, until the vegetables are tender-crisp, about 5-7 minutes. Add minced garlic, smoked paprika, oregano, and red pepper flakes (if using). Cook for 1 minute more, until fragrant.
  4. In a small bowl, whisk together tomato sauce, apple cider vinegar, brown sugar, Worcestershire sauce, and Dijon mustard.
  5. Pour the sauce over the turkey and peppers in the skillet. Stir to combine. Bring to a simmer, then reduce heat to low. Cover and cook for 10-15 minutes, or until the sauce has thickened slightly and the flavors have melded.
  6. Season with salt and pepper to taste. Serve hot over your choice of grain or low-carb side.
