Ingredients:
- 1 tablespoon olive oil (15 ml)
- 1 pound ground turkey (450g), preferably lean (93/7)
- 1 medium yellow onion, chopped (about 1 cup)
- 1 red bell pepper, seeded and chopped (about 1 cup)
- 1 yellow bell pepper, seeded and chopped (about 1 cup)
- 1 orange bell pepper, seeded and chopped (about 1 cup)
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- ½ teaspoon dried oregano
- ¼ teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- ½ cup tomato sauce (120ml)
- 2 tablespoons apple cider vinegar (30ml)
- 1 tablespoon brown sugar, packed (15g)
- 1 teaspoon Worcestershire sauce
- ½ teaspoon Dijon mustard
Instructions:
- Heat olive oil in a large skillet over medium-high heat.
- Add ground turkey to the skillet and cook, breaking it up with a wooden spoon, until browned. Drain off any excess grease.
- Add chopped onion and bell peppers to the skillet. Cook, stirring occasionally, until the vegetables are tender-crisp, about 5-7 minutes. Add minced garlic, smoked paprika, oregano, and red pepper flakes (if using). Cook for 1 minute more, until fragrant.
- In a small bowl, whisk together tomato sauce, apple cider vinegar, brown sugar, Worcestershire sauce, and Dijon mustard.
- Pour the sauce over the turkey and peppers in the skillet. Stir to combine. Bring to a simmer, then reduce heat to low. Cover and cook for 10-15 minutes, or until the sauce has thickened slightly and the flavors have melded.
- Season with salt and pepper to taste. Serve hot over your choice of grain or low-carb side.
