Ingredients:
- 4 cups cucumbers, thinly sliced
- 1 large onion, thinly sliced
- 1 tablespoon salt
- 1 cup granulated sugar
- 1 cup white vinegar
- 1 teaspoon mustard seeds
- 1 teaspoon celery seeds
- 1 teaspoon turmeric
- ½ teaspoon black peppercorns
Instructions:
- Slice cucumbers and onion. Combine in a large bowl with salt; toss to coat. Let sit for 30 minutes to draw out moisture.
- After 30 minutes, rinse the cucumber mixture under cold water and drain well.
- In a saucepan, combine sugar, vinegar, mustard seeds, celery seeds, turmeric, and peppercorns. Bring to a boil, stirring until sugar dissolves.
- Pour the hot brine over the cucumber-onion mixture. Stir gently to combine, then transfer to sterilized jars.
- Allow to cool to room temperature, then refrigerate for at least 1 hour before serving. Better when chilled overnight!
