Ingredients:

  • 4 cups cucumbers, thinly sliced
  • 1 large onion, thinly sliced
  • 1 tablespoon salt
  • 1 cup granulated sugar
  • 1 cup white vinegar
  • 1 teaspoon mustard seeds
  • 1 teaspoon celery seeds
  • 1 teaspoon turmeric
  • ½ teaspoon black peppercorns

Instructions:

  1. Slice cucumbers and onion. Combine in a large bowl with salt; toss to coat. Let sit for 30 minutes to draw out moisture.
  2. After 30 minutes, rinse the cucumber mixture under cold water and drain well.
  3. In a saucepan, combine sugar, vinegar, mustard seeds, celery seeds, turmeric, and peppercorns. Bring to a boil, stirring until sugar dissolves.
  4. Pour the hot brine over the cucumber-onion mixture. Stir gently to combine, then transfer to sterilized jars.
  5. Allow to cool to room temperature, then refrigerate for at least 1 hour before serving. Better when chilled overnight!
