  1. Prepare the Onions: Slice the onions incredibly thinly. Place them in a large bowl along with the chopped coriander, salt, ginger-garlic paste, turmeric, cumin, ground coriander, and chilli powder. Mix thoroughly with your hands, squeezing gently. Let this mixture sit for 5 minutes.
  2. Make the Batter: Sprinkle the gram flour over the seasoned onions. Pour in the lukewarm water, starting with 1/4 cup, and mix until just combined. The batter should be thick. Do not overmix.
  3. Add Final Spice & Shape: Stir in the Garam Masala. Using dampened hands, scoop tablespoon-sized portions of the mixture and gently press them into rough, flattened disc shapes (about 1/2 inch thick).
  4. Prepare for Cooking: Arrange the bhajis on a parchment-lined baking tray or in the air fryer basket, ensuring space between each one.
  5. Spray & Cook (Oven Method): Lightly coat the tops of the bhajis liberally with low-calorie cooking spray. Bake in a preheated oven at 400°F (200°C / Gas Mark 6) for 10 minutes.
  6. Flip & Finish: Flip the bhajis carefully, spray the second side with cooking spray, and return to the oven for another 10–15 minutes, or until they are deep golden brown and crisp on the edges.
  7. Serve: Remove from the oven and allow to cool briefly before serving immediately, ideally with a low-fat yogurt dip.
