Ingredients:
- 4 boneless, skinless chicken breasts (about 6 oz/170g each)
- 2 tablespoons olive oil (30 ml)
- 2 tablespoons Tajin seasoning (30 ml)
- 1 teaspoon garlic powder (5 ml)
- 1/2 teaspoon black pepper (2.5 ml)
- 1 ripe mango, diced (approx. 200g)
- 1/2 red onion, finely diced (approx. 50g)
- 1/2 red bell pepper, finely diced (approx. 75g)
- 1 jalapeno pepper, seeded and minced (or more, to taste)
- 1/4 cup chopped fresh cilantro (about 10g)
- 2 tablespoons lime juice (30 ml)
- 1 tablespoon olive oil (15 ml)
- Salt to taste
Instructions:
- In a small bowl, combine olive oil, Tajin seasoning, garlic powder, and black pepper. Rub mixture all over the chicken breasts, ensuring they are evenly coated.
- In a medium bowl, combine diced mango, red onion, red bell pepper, jalapeno, and cilantro.
- Add lime juice and olive oil to the salsa mixture. Season with salt to taste. Stir gently to combine.
- Preheat grill to medium-high heat. Place chicken breasts on the grill and cook for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C). Use an instant-read thermometer to ensure doneness.
- Remove chicken from the grill and let it rest for 5 minutes before slicing. Top each chicken breast with a generous spoonful of mango salsa and serve immediately.
