Ingredients:

  • 4 boneless, skinless chicken breasts (about 6 oz/170g each)
  • 2 tablespoons olive oil (30 ml)
  • 2 tablespoons Tajin seasoning (30 ml)
  • 1 teaspoon garlic powder (5 ml)
  • 1/2 teaspoon black pepper (2.5 ml)
  • 1 ripe mango, diced (approx. 200g)
  • 1/2 red onion, finely diced (approx. 50g)
  • 1/2 red bell pepper, finely diced (approx. 75g)
  • 1 jalapeno pepper, seeded and minced (or more, to taste)
  • 1/4 cup chopped fresh cilantro (about 10g)
  • 2 tablespoons lime juice (30 ml)
  • 1 tablespoon olive oil (15 ml)
  • Salt to taste

Instructions:

  1. In a small bowl, combine olive oil, Tajin seasoning, garlic powder, and black pepper. Rub mixture all over the chicken breasts, ensuring they are evenly coated.
  2. In a medium bowl, combine diced mango, red onion, red bell pepper, jalapeno, and cilantro.
  3. Add lime juice and olive oil to the salsa mixture. Season with salt to taste. Stir gently to combine.
  4. Preheat grill to medium-high heat. Place chicken breasts on the grill and cook for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C). Use an instant-read thermometer to ensure doneness.
  5. Remove chicken from the grill and let it rest for 5 minutes before slicing. Top each chicken breast with a generous spoonful of mango salsa and serve immediately.
