Ingredients:
- 1 ½ cups all-purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup whole milk
- 1 package flavored gelatin (any flavor of your choice)
- 2 cups boiling water
- 1 cup cold water
- 1 cup heavy whipping cream
- ¼ cup powdered sugar
- Fresh fruit (e.g., berries or slices of kiwi) for garnish
Instructions:
- Preheat the oven to 350°F (175°C). In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, cream unsalted butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla.
- Gradually add the dry ingredients and milk, mixing until just combined.
- Pour the batter into the prepared pan. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely in the pan on a wire rack.
- In a bowl, dissolve the gelatin in boiling water, then add cold water. Stir well and allow the jello mixture to cool for about 30 minutes.
- Once the cake has cooled, use a fork to poke holes all over the top. Pour the cooled jello mixture evenly over the cake, ensuring it seeps into the holes.
- Refrigerate for at least 4 hours or until the jello is set.
- Whip the heavy cream with powdered sugar until soft peaks form, then spread the whipped cream over the set jello cake and garnish with fresh fruit.
