Ingredients:

  • 1 ½ cups all-purpose flour

  • 1 package flavored gelatin (any flavor of your choice)
  • 2 cups boiling water
  • 1 cup cold water
  • 1 cup heavy whipping cream
  • ¼ cup powdered sugar
  • Fresh fruit (e.g., berries or slices of kiwi) for garnish

Instructions:

  1. Preheat the oven to 350°F (175°C). In a bowl, whisk together flour, baking powder, and salt.
  2. In another bowl, cream unsalted butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla.
  3. Gradually add the dry ingredients and milk, mixing until just combined.
  4. Pour the batter into the prepared pan. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely in the pan on a wire rack.
  5. In a bowl, dissolve the gelatin in boiling water, then add cold water. Stir well and allow the jello mixture to cool for about 30 minutes.
  6. Once the cake has cooled, use a fork to poke holes all over the top. Pour the cooled jello mixture evenly over the cake, ensuring it seeps into the holes.
  7. Refrigerate for at least 4 hours or until the jello is set.
  8. Whip the heavy cream with powdered sugar until soft peaks form, then spread the whipped cream over the set jello cake and garnish with fresh fruit.
