Ingredients:

  • 2 pounds country style pork ribs (900 g)
  • 2 tablespoons olive oil (30 ml)
  • 1 tablespoon smoked paprika (15 g)
  • 1 teaspoon garlic powder (4 g)
  • 1 teaspoon onion powder (4 g)
  • 1 teaspoon salt (5 g)
  • ½ teaspoon black pepper (2 g)
  • ½ cup barbecue sauce (120 ml)
  • 2 tablespoons apple cider vinegar (30 ml)
  • 2 tablespoons honey (30 g)

Instructions:

  1. Rinse ribs and pat dry with paper towels. Trim excess fat if necessary.
  2. In a bowl, combine the olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Rub the mixture evenly over the ribs. (Optional) Marinate for 30 minutes in the refrigerator for deeper flavor.
  3. Preheat oven to 300°F (150°C). In a heavy-bottomed skillet, sear the ribs on medium-high heat until browned (about 3-4 minutes per side). Transfer ribs to a baking dish or Dutch oven, add marinade/sauce, cover tightly with foil. Cook for 2.5 to 3 hours or until tender.
  4. Place the seasoned ribs in the slow cooker, add marinade/sauce. Cover and cook on low for 6-8 hours or high for 3-4 hours, until tender.
  5. Use a meat thermometer to ensure an internal temperature of 190°F (88°C) for tender meat. Rest the ribs for 10 minutes before slicing or serving.
