Ingredients:
- 5 ounces (142g) Tuna in olive oil, drained
- 2 tablespoons (30ml) Mayonnaise
- 1 tablespoon (15ml) Celery, finely diced
- 1 tablespoon (15ml) Red onion, finely diced
- 1 tablespoon (15ml) Fresh Parsley, chopped
- 1 teaspoon (5ml) Dijon Mustard
- 1/2 teaspoon (2.5ml) Lemon Juice, fresh
- 1/4 teaspoon (1.25ml) Black Pepper, freshly ground
- Pinch of Sea Salt, or to taste
- 2 slices Sourdough Bread (thick-cut)
- 1 tablespoon (15ml) Butter, unsalted, softened
- 2 slices Cheddar Cheese (sharp or mild)
Instructions:
- In a mixing bowl, flake the tuna with a fork. Add mayonnaise, celery, red onion, parsley, Dijon mustard, lemon juice, salt and pepper. Gently mix until well combined.
- Spread softened butter on one side of each slice of bread. Place one slice of bread, butter-side down, in the griddle pan.
- Top the bread with the Cheddar cheese. Then, spread the tuna salad evenly over the cheese. Add optional tomato slices.
- Place the second slice of bread on top, butter-side up.
- Cook over medium heat for 3-4 minutes per side, or until golden brown and the cheese is melted. Press down gently with a spatula.
- Remove from the pan, slice in half, and serve immediately. Enjoy the Best Ever Tuna Fish Sandwich!
