Ingredients:

  • 5 ounces (142g) Tuna in olive oil, drained
  • 2 tablespoons (30ml) Mayonnaise
  • 1 tablespoon (15ml) Celery, finely diced
  • 1 tablespoon (15ml) Red onion, finely diced
  • 1 tablespoon (15ml) Fresh Parsley, chopped
  • 1 teaspoon (5ml) Dijon Mustard
  • 1/2 teaspoon (2.5ml) Lemon Juice, fresh
  • 1/4 teaspoon (1.25ml) Black Pepper, freshly ground
  • Pinch of Sea Salt, or to taste
  • 2 slices Sourdough Bread (thick-cut)
  • 1 tablespoon (15ml) Butter, unsalted, softened
  • 2 slices Cheddar Cheese (sharp or mild)

Instructions:

  1. In a mixing bowl, flake the tuna with a fork. Add mayonnaise, celery, red onion, parsley, Dijon mustard, lemon juice, salt and pepper. Gently mix until well combined.
  2. Spread softened butter on one side of each slice of bread. Place one slice of bread, butter-side down, in the griddle pan.
  3. Top the bread with the Cheddar cheese. Then, spread the tuna salad evenly over the cheese. Add optional tomato slices.
  4. Place the second slice of bread on top, butter-side up.
  5. Cook over medium heat for 3-4 minutes per side, or until golden brown and the cheese is melted. Press down gently with a spatula.
  6. Remove from the pan, slice in half, and serve immediately. Enjoy the Best Ever Tuna Fish Sandwich!
