Ingredients:
- 225g (1 3/4 cups) All-Purpose Flour, plus extra for dusting the pan
- 2 teaspoons Baking Powder
- 1/4 teaspoon Salt
- 115g (1/2 cup, 1 stick) Unsalted Butter, softened
- 200g (1 cup) Granulated Sugar
- 2 Large Eggs
- 2 teaspoons Vanilla Extract
- 120ml (1/2 cup) Milk
Instructions:
- Preheat the oven to 175°C (350°F). Grease and flour (or grease and line with parchment paper) a 9-inch round cake pan.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, cream together the softened butter and granulated sugar with an electric mixer until light and fluffy (3-5 minutes).
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined. Do not overmix.
- Pour the batter into the prepared cake pan and spread evenly.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
