Ingredients:

  • 225g (1 3/4 cups) All-Purpose Flour, plus extra for dusting the pan
  • 2 teaspoons Baking Powder
  • 1/4 teaspoon Salt
  • 115g (1/2 cup, 1 stick) Unsalted Butter, softened
  • 200g (1 cup) Granulated Sugar
  • 2 Large Eggs
  • 2 teaspoons Vanilla Extract
  • 120ml (1/2 cup) Milk

Instructions:

  1. Preheat the oven to 175°C (350°F). Grease and flour (or grease and line with parchment paper) a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the softened butter and granulated sugar with an electric mixer until light and fluffy (3-5 minutes).
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined. Do not overmix.
  6. Pour the batter into the prepared cake pan and spread evenly.
  7. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
