Ingredients:
- 1 large russet potato
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- Optional: garlic powder, onion powder, paprika
Instructions:
- Preheat oven to 400°F (200°C).
- Scrub potatoes thoroughly under cold water. Pat completely dry with paper towels.
- Using a fork, prick the potatoes all over several times.
- Rub potatoes with olive oil. Sprinkle generously with kosher salt, pepper, and any other desired seasonings.
- Place potatoes directly on the baking sheet. Bake for 60-90 minutes, or until easily pierced with a fork. Check for doneness: internal temperature should reach 210°F (99°C).
- For extra crispy skin, increase oven temperature to 450°F (232°C) for the last 10-15 minutes of baking. Watch carefully to prevent burning.
- Remove from oven and let cool slightly before handling. Cut open, fluff the inside with a fork, and add your favourite toppings.
