Ingredients:

  • 1 large russet potato
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • Optional: garlic powder, onion powder, paprika

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Scrub potatoes thoroughly under cold water. Pat completely dry with paper towels.
  3. Using a fork, prick the potatoes all over several times.
  4. Rub potatoes with olive oil. Sprinkle generously with kosher salt, pepper, and any other desired seasonings.
  5. Place potatoes directly on the baking sheet. Bake for 60-90 minutes, or until easily pierced with a fork. Check for doneness: internal temperature should reach 210°F (99°C).
  6. For extra crispy skin, increase oven temperature to 450°F (232°C) for the last 10-15 minutes of baking. Watch carefully to prevent burning.
  7. Remove from oven and let cool slightly before handling. Cut open, fluff the inside with a fork, and add your favourite toppings.
