Ingredients:

  • 225g Unsalted Butter, softened
  • 225g Granulated Sugar
  • 225g Large Eggs (about 4)
  • 225g All-Purpose Flour
  • 1 tsp Baking Powder
  • 1 tsp Vanilla Extract
  • Pinch of Salt (optional)
  • 2 tbsp Powdered Sugar (optional)
  • 1-2 tsp Milk (optional)

Instructions:

  1. Grease and flour a 9x5 inch loaf pan.
  2. Beat the softened butter and sugar together until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. In a separate bowl, whisk together the flour, baking powder, and salt (if using).
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the vanilla extract, beginning and ending with the dry ingredients. Mix until just combined.
  6. Pour the batter into the prepared loaf pan and spread evenly.
  7. Bake in a preheated oven at 350°F (175°C) for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  9. Whisk together the powdered sugar and milk until smooth. Drizzle over the cooled cake (optional).
  10. Once completely cooled, slice and serve.
