Ingredients:
- 1 cup (120g) Tapioca Starch, plus extra for dusting
- ½ cup (120ml) Water
- ¼ cup (50g) Brown Sugar, packed
- 1 cup (240ml) Water
- 1 cup (200g) Granulated Sugar
Instructions:
- Combine water and brown sugar in a saucepan and bring to a boil.
- Remove the saucepan from the heat and quickly stir in the tapioca starch until a dough forms.
- Turn the dough out onto a lightly dusted surface and knead until smooth and elastic. Add more tapioca starch if the dough is too sticky.
- Roll the dough into small balls (about ¼ inch in diameter). Keep them covered with tapioca starch to prevent sticking.
- Bring a large pot of water to a rolling boil. Gently add the boba and cook until they float to the surface (about 5 minutes).
- Reduce the heat and simmer for an additional 15-20 minutes, stirring occasionally.
- While the boba simmers, combine water and granulated sugar in a saucepan and heat until the sugar dissolves, making a simple syrup.
- Drain the cooked boba and rinse with cold water. Transfer them to the simple syrup and let them soak for at least 20 minutes.
- Add the boba to your favourite milk tea or other beverage. Enjoy immediately! Now you know how to make boba.
