Ingredients:

  • 1 cup (120g) Tapioca Starch, plus extra for dusting
  • ½ cup (120ml) Water
  • ¼ cup (50g) Brown Sugar, packed
  • 1 cup (240ml) Water
  • 1 cup (200g) Granulated Sugar

Instructions:

  1. Combine water and brown sugar in a saucepan and bring to a boil.
  2. Remove the saucepan from the heat and quickly stir in the tapioca starch until a dough forms.
  3. Turn the dough out onto a lightly dusted surface and knead until smooth and elastic. Add more tapioca starch if the dough is too sticky.
  4. Roll the dough into small balls (about ¼ inch in diameter). Keep them covered with tapioca starch to prevent sticking.
  5. Bring a large pot of water to a rolling boil. Gently add the boba and cook until they float to the surface (about 5 minutes).
  6. Reduce the heat and simmer for an additional 15-20 minutes, stirring occasionally.
  7. While the boba simmers, combine water and granulated sugar in a saucepan and heat until the sugar dissolves, making a simple syrup.
  8. Drain the cooked boba and rinse with cold water. Transfer them to the simple syrup and let them soak for at least 20 minutes.
  9. Add the boba to your favourite milk tea or other beverage. Enjoy immediately! Now you know how to make boba.
