Ingredients:
- 3 large ripe bananas (approximately 450g when peeled)
- 1/3 cup (75g) unsalted butter, melted
- 1/2 cup (100g) granulated sugar
- 1/4 cup (50g) brown sugar, packed
- 1 large egg, beaten or 1/4 cup unsweetened applesauce for a vegan option
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 1 teaspoon ground cinnamon
- 1 1/2 cups (190g) all-purpose flour
- Optional: 1/2 cup (70g) chopped walnuts or chocolate chips
Instructions:
- Preheat the oven to 350°F (175°C). Grease or line the loaf pan with parchment paper.
- In a mixing bowl, mash the ripe bananas thoroughly until smooth with a fork.
- Stir in melted butter, followed by granulated sugar, brown sugar, egg, and vanilla. Mix until well combined.
- In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
- Gradually fold the dry ingredients into the wet mixture using a rubber spatula until just combined; do not over-mix.
- Fold in walnuts or chocolate chips if using.
- Pour the batter into the prepared loaf pan. Bake for 55-60 minutes or until a toothpick inserted into the center comes out clean.
- Let the banana bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
