Ingredients:
- 1 cup (170g) frozen mango chunks
- ½ cup (120ml) full-fat coconut milk, canned
- ½ cup (120ml) pineapple juice (optional)
- 1 tablespoon (15ml) lime juice, freshly squeezed
- 1 tablespoon (15g) shredded coconut, unsweetened
- ½ cup (120ml) ice cubes
- 1 teaspoon (5ml) honey or maple syrup (optional)
Instructions:
- Add all ingredients – frozen mango, coconut milk, pineapple juice (if using), lime juice, shredded coconut, ice cubes, and honey/maple syrup (if using) – to the blender.
- Blend on high speed until completely smooth and creamy.
- If the smoothie is too thick, add a splash of water or more pineapple juice. If it's too thin, add a few more ice cubes and blend again.
- Taste the smoothie and add more honey or lime juice to adjust the sweetness and tartness to your liking.
- Pour into a glass and enjoy immediately. Garnish with a sprinkle of shredded coconut or a lime wedge, if you're feeling fancy.
