  • 8 oz (2 sticks) Unsalted Butter, softened to room temperature
  • 4 - 6 large cloves Fresh Garlic, finely minced
  • 2 tablespoons Fresh Parsley, finely chopped
  • 1 teaspoon Fine Sea Salt
  • 1/2 teaspoon Freshly Ground Black Pepper
  • 1/2 teaspoon Lemon Zest (Optional)

Instructions:

  1. Soften the Butter: Ensure the butter is fully softened to room temperature—it should be yielding when pressed but not oily or melted. This is non-negotiable for a smooth finish.
  2. Prep Aromatics: Peel and mince the garlic very finely. Chop the parsley until uniform. Zest the lemon, if using.
  3. Combine Ingredients: Place the softened butter into the mixing bowl. Add the minced garlic, parsley, salt, pepper, and lemon zest.
  4. Mix Thoroughly: Using a rubber spatula or wooden spoon, fold and press the ingredients into the butter until everything is uniformly distributed. Do not use a stand mixer.
  5. Taste and Adjust: Take a small amount of the mixed butter, spread it on a neutral cracker or bread, and taste for seasoning. Adjust salt and pepper as needed.
  6. Shape the Log (Optional): Lay out a sheet of parchment paper or cling film. Spoon the butter mixture onto the paper in a line.
  7. Roll and Tighten: Use the paper to snugly roll the butter into a tight cylinder (a classic log shape). Twist the ends of the paper to seal and compress the butter.
  8. Chill: Place the butter log in the refrigerator for at least 30 minutes until firm enough to slice neatly.
  9. Store: Once chilled, the butter can be sliced into rounds for easy use, or kept refrigerated in its log form for up to two weeks, or frozen for up to six months.
