Ingredients:

  • 3 large overripe bananas (about 450g when peeled)
  • 1/3 cup (75g) unsalted butter, melted
  • 3/4 cup (150g) granulated sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups (190g) all-purpose flour

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, mash the ripe bananas until smooth.
  3. Stir in the melted butter until well combined.
  4. Add the sugar, beaten egg, and vanilla extract; mix well.
  5. Sprinkle the baking soda and salt over the mixture and stir to combine.
  6. Gradually add the flour, folding it in carefully until just combined.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50-60 minutes or until golden brown and a toothpick inserted into the center comes out clean.
  9. Allow the banana bread to cool in the pan for 10 minutes, then turn it out onto a cooling rack.
