Ingredients:

  • 1 lb fresh strawberries, firm with hulls intact
  • 1 cup high-quality dark chocolate chips (70% cacao or higher)
  • 1 tsp refined coconut oil
  • 2 tbsp white chocolate chips
  • 2 tbsp crushed raw pistachios
  • 1 tsp flaky sea salt

Instructions:

  1. Wash 1 lb of strawberries carefully, keeping the green hulls attached. Note: Water is the enemy; ensure they are completely dry.
  2. Lay the berries on a clean towel for 30 minutes. Wait until the skin feels slightly matte and not slick.
  3. Fill a pot with 2 inches of water and bring to a simmer. Place a glass bowl on top, ensuring the bottom doesn't touch the water.
  4. Add 1 cup dark chocolate chips and 1 tsp coconut oil to the bowl. Stir until the liquid is glossy and moves like heavy cream.
  5. Hold a strawberry by the green hull and swirl it in the chocolate. Note: Don't submerge the greens; the contrast looks better.
  6. Let the extra chocolate drip off for 3 seconds. Stop when the stream turns into slow drops.
  7. Immediately sprinkle the crushed pistachios and flaky sea salt onto the wet chocolate.
  8. Melt 2 tbsp white chocolate and use a fork or bag to create thin stripes. Move quickly to keep the lines crisp.
  9. Place the berries on parchment paper at room temperature for 30 minutes. Check for a firm, dull shine finish.
  10. Move them to the fridge for 10 minutes if you prefer a cold bite, but room temp is best for flavor.
