Ingredients:
- 1 box (15.25 oz) vanilla cake mix
- 3 large eggs
- 1/2 cup unsweetened applesauce
- 1 cup skim milk
- 1/2 cup plain Greek yogurt
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar, sifted
- 1 tsp vanilla extract
- 2 tbsp heavy cream
- 1/2 cup rainbow nonpareil sprinkles
Instructions:
- Preheat oven to 350°F (175°C) and line a 9x13 inch baking pan with parchment paper.
- In a large bowl, combine cake mix, eggs, applesauce, milk, and Greek yogurt. Beat on medium speed for 2 minutes until smooth.
- Spread the batter evenly into the prepared pan, ensuring corners are filled.
- Bake for 12-15 minutes until the center springs back. Let the cake cool completely in the pan.
- Lift the cake out using the parchment paper and use a 2-inch circular cutter to cut circles across the sheet.
- Beat softened butter until creamy, then gradually add powdered sugar, vanilla, and heavy cream until smooth.
- Frost the top of each cake dot and finish with rainbow nonpareil sprinkles.
