Ingredients:

  • 1 box (15.25 oz) vanilla cake mix
  • 3 large eggs
  • 1/2 cup unsweetened applesauce
  • 1 cup skim milk
  • 1/2 cup plain Greek yogurt
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar, sifted
  • 1 tsp vanilla extract
  • 2 tbsp heavy cream
  • 1/2 cup rainbow nonpareil sprinkles

Instructions:

  1. Preheat oven to 350°F (175°C) and line a 9x13 inch baking pan with parchment paper.
  2. In a large bowl, combine cake mix, eggs, applesauce, milk, and Greek yogurt. Beat on medium speed for 2 minutes until smooth.
  3. Spread the batter evenly into the prepared pan, ensuring corners are filled.
  4. Bake for 12-15 minutes until the center springs back. Let the cake cool completely in the pan.
  5. Lift the cake out using the parchment paper and use a 2-inch circular cutter to cut circles across the sheet.
  6. Beat softened butter until creamy, then gradually add powdered sugar, vanilla, and heavy cream until smooth.
  7. Frost the top of each cake dot and finish with rainbow nonpareil sprinkles.
