Ingredients:

  • 2 cups (400g) leftover fried rice
  • 1 large egg, lightly beaten
  • 1 tablespoon soy sauce (15 ml)
  • 1 teaspoon sesame oil (5 ml)
  • 1/4 cup (25g) chopped spring onions/scallions
  • Vegetable oil or cooking spray

Instructions:

  1. Spread the fried rice on a baking sheet and refrigerate for at least 30 minutes to dry it out slightly.
  2. In a mixing bowl, gently combine the chilled rice, beaten egg, soy sauce, sesame oil, and spring onions/scallions. Don’t overmix.
  3. Preheat your waffle maker according to the manufacturer's instructions. Lightly grease the waffle grids with vegetable oil or cooking spray.
  4. Spoon about half of the rice mixture onto the waffle maker, spreading it evenly. Close the waffle maker and cook for 5-10 minutes, or until golden brown and crispy.
  5. Carefully remove the waffled rice with a spatula. Repeat with the remaining rice mixture.
  6. Serve immediately with your favourite toppings and sides.
