Ingredients:
- 2 cups (400g) leftover fried rice
- 1 large egg, lightly beaten
- 1 tablespoon soy sauce (15 ml)
- 1 teaspoon sesame oil (5 ml)
- 1/4 cup (25g) chopped spring onions/scallions
- Vegetable oil or cooking spray
Instructions:
- Spread the fried rice on a baking sheet and refrigerate for at least 30 minutes to dry it out slightly.
- In a mixing bowl, gently combine the chilled rice, beaten egg, soy sauce, sesame oil, and spring onions/scallions. Don’t overmix.
- Preheat your waffle maker according to the manufacturer's instructions. Lightly grease the waffle grids with vegetable oil or cooking spray.
- Spoon about half of the rice mixture onto the waffle maker, spreading it evenly. Close the waffle maker and cook for 5-10 minutes, or until golden brown and crispy.
- Carefully remove the waffled rice with a spatula. Repeat with the remaining rice mixture.
- Serve immediately with your favourite toppings and sides.
