Ingredients:
- 1 cup (225g) unsalted butter, softened
- 1 cup (200g) packed dark brown sugar
- 1/2 cup (100g) granulated white sugar
- 2 large eggs
- 2 tsp (10ml) pure vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1 tsp (5g) ground cinnamon
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) fine sea salt
- 3 cups (270g) old-fashioned rolled oats
- 1 cup (115g) chopped walnuts, toasted
- 1 1/2 cups (255g) semi-sweet chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C). Place chopped walnuts on a small tray and toast for 5–7 minutes until golden brown, then set aside to cool.
- In a large bowl, cream together the softened butter, brown sugar, and white sugar on medium-high for 2–3 minutes until pale and fluffy.
- Add eggs one at a time, beating well after each addition, then stir in the vanilla extract.
- Lower mixer speed and gradually mix in the flour, cinnamon, baking soda, and salt until just combined.
- Using a sturdy spatula, fold in the rolled oats, toasted walnuts, and chocolate chips by hand until evenly distributed.
- Scoop rounded tablespoons of dough onto parchment-lined baking sheets and bake for 12 minutes until edges are golden.
