Ingredients:

  • 1 cup (225g) unsalted butter, softened
  • 1 cup (200g) packed dark brown sugar
  • 1/2 cup (100g) granulated white sugar
  • 2 large eggs
  • 2 tsp (10ml) pure vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp (5g) ground cinnamon
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) fine sea salt
  • 3 cups (270g) old-fashioned rolled oats
  • 1 cup (115g) chopped walnuts, toasted
  • 1 1/2 cups (255g) semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Place chopped walnuts on a small tray and toast for 5–7 minutes until golden brown, then set aside to cool.
  2. In a large bowl, cream together the softened butter, brown sugar, and white sugar on medium-high for 2–3 minutes until pale and fluffy.
  3. Add eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  4. Lower mixer speed and gradually mix in the flour, cinnamon, baking soda, and salt until just combined.
  5. Using a sturdy spatula, fold in the rolled oats, toasted walnuts, and chocolate chips by hand until evenly distributed.
  6. Scoop rounded tablespoons of dough onto parchment-lined baking sheets and bake for 12 minutes until edges are golden.
