Ingredients:

  • 4 cups cubed watermelon (about 1-inch cubes)
  • 8 ounces feta cheese, drained and cubed (about 1-inch cubes)
  • 1/4 cup fresh mint leaves
  • 12-15 wooden skewers (6-inch length)
  • 1/2 cup balsamic vinegar
  • 1 tablespoon honey

Instructions:

  1. Combine balsamic vinegar and honey in a small saucepan. Bring to a simmer over medium heat. Reduce heat to low and simmer for 5-7 minutes, or until the glaze has thickened slightly. Let cool completely.
  2. Thread a cube of watermelon, a cube of feta cheese, and a mint leaf onto each skewer. Repeat the order until the skewer is nearly full.
  3. Arrange the skewers on a serving platter. Drizzle generously with the cooled balsamic glaze just before serving.
  4. Serve the skewers immediately for the best flavour and texture.
