Ingredients:
- 4 cups cubed watermelon (about 1-inch cubes)
- 8 ounces feta cheese, drained and cubed (about 1-inch cubes)
- 1/4 cup fresh mint leaves
- 12-15 wooden skewers (6-inch length)
- 1/2 cup balsamic vinegar
- 1 tablespoon honey
Instructions:
- Combine balsamic vinegar and honey in a small saucepan. Bring to a simmer over medium heat. Reduce heat to low and simmer for 5-7 minutes, or until the glaze has thickened slightly. Let cool completely.
- Thread a cube of watermelon, a cube of feta cheese, and a mint leaf onto each skewer. Repeat the order until the skewer is nearly full.
- Arrange the skewers on a serving platter. Drizzle generously with the cooled balsamic glaze just before serving.
- Serve the skewers immediately for the best flavour and texture.
