Ingredients:

  • 1 small seedless watermelon (about 4 lbs/1.8 kg), cubed into 1-inch/2.5 cm cubes
  • 8 ounces/225g good quality feta cheese, cubed into 1-inch/2.5 cm cubes
  • 1 bunch fresh mint leaves, about 1/2 cup lightly packed (roughly chopped)
  • 1 cup/240ml balsamic vinegar
  • 1 tablespoon honey (or maple syrup for vegan option)

Instructions:

  1. Cut the watermelon into 1-inch cubes and the feta into similar sized cubes.
  2. Roughly chop the fresh mint leaves.
  3. In a small saucepan, combine the balsamic vinegar and honey. Bring to a simmer over medium heat. Cook, stirring occasionally, until the vinegar has reduced by half and thickened to a syrupy consistency (about 5 minutes). Remove from heat and let cool completely.
  4. Thread a watermelon cube, a feta cube, and a mint leaf onto each skewer. Repeat until all ingredients are used. Aim for a visually appealing pattern.
  5. Arrange the skewers on a serving platter. Drizzle with the balsamic glaze (if using). Chill for at least 15 minutes before serving to allow the flavors to meld.
  6. Sprinkle with extra mint or a crack of fresh black pepper before serving.
