Ingredients:

  • 2 cups (240g) all-purpose flour
  • 1 ½ cups (300g) granulated sugar
  • ½ cup (115g) unsalted butter, softened
  • 3 large eggs
  • 1 cup (240ml) 7 Up (or any lemon-lime soda)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 1 cup (120g) powdered sugar for glaze (optional)
  • 2 tablespoons (30ml) lemon juice for glaze (optional)
  • 1 tablespoon (15ml) milk for glaze (optional)

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour the cake pan.
  3. In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  4. In a large bowl, beat the softened butter and granulated sugar until light and fluffy.
  5. Add eggs one at a time, beating well after each addition.
  6. Gradually mix in the dry ingredients, alternating with 7 Up, starting and ending with the flour mixture.
  7. Stir in vanilla extract and lemon zest.
  8. Pour the batter into the prepared pan and smooth the top.
  9. Bake for about 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  10. Let the cake cool in the pan for 10 minutes, then turn onto a wire rack to cool completely.
  11. Mix powdered sugar, lemon juice, and milk until smooth. Drizzle over the cooled cake, if using.
