Ingredients:
- 2 cups (240g) all-purpose flour
- 1 ½ cups (300g) granulated sugar
- ½ cup (115g) unsalted butter, softened
- 3 large eggs
- 1 cup (240ml) 7 Up (or any lemon-lime soda)
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- Zest of 1 lemon
- 1 cup (120g) powdered sugar for glaze (optional)
- 2 tablespoons (30ml) lemon juice for glaze (optional)
- 1 tablespoon (15ml) milk for glaze (optional)
Instructions:
- Preheat oven to 350°F (175°C).
- Grease and flour the cake pan.
- In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, beat the softened butter and granulated sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Gradually mix in the dry ingredients, alternating with 7 Up, starting and ending with the flour mixture.
- Stir in vanilla extract and lemon zest.
- Pour the batter into the prepared pan and smooth the top.
- Bake for about 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then turn onto a wire rack to cool completely.
- Mix powdered sugar, lemon juice, and milk until smooth. Drizzle over the cooled cake, if using.
