Instructions:

  1. Ensure the cooked chicken is shredded finely.
  2. In the food processor, combine the drained cottage cheese, softened cream cheese, Buffalo sauce, garlic powder, and onion powder. Process until completely smooth and creamy.
  3. Scrape the mixture into a mixing bowl. Gently fold in the shredded chicken and the optional dressing, mixing until evenly distributed. Taste and adjust salt/pepper if needed.
  4. Transfer the mixture into a prepared small oven-safe baking dish (approx. 8x8 inch).
  5. Sprinkle the shredded cheddar cheese evenly over the top.
  6. Bake at 375°F (190°C) for 15 minutes, or until the edges are bubbling. For a golden crust, switch to the broiler for the last 1–2 minutes, watching very carefully to prevent burning.
  7. Remove from the oven, let cool for 5 minutes. Sprinkle generously with fresh chives before serving warm with dippers like celery or tortilla chips.
