Ingredients:

  • 1 cup long-grain white rice (200g)
  • 2 cups vegetable broth or water (480ml)
  • 1 tablespoon unsalted butter or oil (15g)
  • 1/2 teaspoon salt (3g)
  • Juice of 1 medium lime (about 2 tablespoons or 30ml)
  • Zest of 1 medium lime
  • 1/2 cup fresh cilantro, chopped (15g)
  • 1/4 teaspoon black pepper (1g)

Instructions:

  1. Rinse the rice under cold water until it runs clear to remove excess starch.
  2. In a medium saucepan, combine rice, broth (or water), butter, and salt. Bring to a boil.
  3. Stir briefly, cover, and reduce to a low simmer. Cook for 15-18 minutes until the rice is tender and liquid is absorbed.
  4. Remove from heat and let it sit, covered, for 5 minutes.
  5. Use a fork to fluff the rice gently.
  6. Stir in lime juice, lime zest, cilantro, and black pepper.
  7. Serve warm, and enjoy!
