Ingredients:
- 1 cup long-grain white rice (200g)
- 2 cups vegetable broth or water (480ml)
- 1 tablespoon unsalted butter or oil (15g)
- 1/2 teaspoon salt (3g)
- Juice of 1 medium lime (about 2 tablespoons or 30ml)
- Zest of 1 medium lime
- 1/2 cup fresh cilantro, chopped (15g)
- 1/4 teaspoon black pepper (1g)
Instructions:
- Rinse the rice under cold water until it runs clear to remove excess starch.
- In a medium saucepan, combine rice, broth (or water), butter, and salt. Bring to a boil.
- Stir briefly, cover, and reduce to a low simmer. Cook for 15-18 minutes until the rice is tender and liquid is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes.
- Use a fork to fluff the rice gently.
- Stir in lime juice, lime zest, cilantro, and black pepper.
- Serve warm, and enjoy!
