Ingredients:

  • 1 cup (200g) long-grain white rice
  • 2 cups (475 ml) water
  • 1 teaspoon (6g) kosher salt
  • 1 tablespoon (15 ml) olive oil
  • 1 clove garlic, minced (approx. 3g)
  • 1/2 cup (15g) fresh cilantro, finely chopped
  • Zest of 1 lime (approx. 1 tsp)
  • Juice of 1 lime (approx. 2 tablespoons/30ml)

Instructions:

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. Heat olive oil in a saucepan over medium heat. Sauté minced garlic until fragrant (about 30 seconds).
  3. Add the rinsed rice, water, and salt to the saucepan.
  4. Bring the mixture to a rolling boil.
  5. Reduce heat to low, cover tightly, and simmer for 15 minutes, or until all the water is absorbed.
  6. Remove from heat and let stand, covered, for 5 minutes.
  7. Fluff the rice with a fork. Gently stir in the chopped cilantro, lime zest, and lime juice. This is the best ever cilantro lime rice recipe!
