Ingredients:
- 4 medium/large Hass Avocados, ripe, halved, pitted
- 1/4 cup Red Onion, very finely diced
- 1/2 cup Roma Tomatoes, seeded and finely diced
- 1 small or 1/2 medium Jalapeño Pepper, seeded and minced
- 1/4 cup Fresh Cilantro, roughly chopped
- 2 tablespoons Fresh Lime Juice (about 1 large lime)
- 1/2 teaspoon Kosher Salt, plus more to taste
- 1/4 teaspoon Black Pepper, freshly ground
- Optional Pinch Ground Cumin
Instructions:
- Finely dice the red onion, deseeded tomatoes, jalapeño, and cilantro. Place them immediately into the mixing bowl.
- Add the lime juice, kosher salt, pepper, and optional cumin to the aromatics. Stir well to combine; this allows the lime to start softening the onion.
- Scoop the flesh of the ripe avocados into the bowl. Using a fork or potato masher, gently pulse/mash the avocado to achieve a chunky texture, avoiding a smooth consistency.
- Using a rubber spatula, gently fold the mashed avocado mixture into the aromatics. Stop mixing as soon as everything is just incorporated.
- Taste the Guacamole immediately and adjust seasoning, adding more salt or lime juice as necessary for a bright flavour.
- Serve immediately with tortilla chips or press plastic wrap directly onto the surface to prevent browning if preparing ahead.
