Ingredients:

  • 1/4 cup (60 ml) olive oil
  • Juice of 2 limes (about 1/4 cup or 60 ml)
  • Juice of 1 orange (about 1/4 cup or 60 ml)
  • 2 cloves garlic, minced
  • 1 teaspoon (5 g) honey
  • Salt and pepper to taste
  • 4 mahi mahi fillets (about 6 ounces or 170 g each)
  • Fresh cilantro for garnish (optional)

Instructions:

  1. In a medium bowl, whisk together olive oil, lime juice, orange juice, garlic, honey, salt, and pepper.
  2. Place mahi mahi fillets in a shallow dish and pour marinade over them. Let sit for 15 minutes.
  3. Preheat the grill to medium-high (about 400°F/204°C).
  4. Remove fillets from marinade and place on the grill. Cook for 4-5 minutes on each side, until mahi mahi cooked temp, reaching approx 145°F (63°C).
  5. Remove from grill, garnish with cilantro if desired, and serve immediately.
