Ingredients:
- 1.5 lbs (680g) boneless, skinless chicken breasts or thighs
- 1/4 cup (60ml) extra virgin olive oil
- 1/4 cup (60ml) fresh lemon juice
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh oregano, chopped (or 1 teaspoon dried oregano)
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
- In a large resealable bag or container, whisk together olive oil, lemon juice, minced garlic, parsley, oregano, thyme, salt, and pepper.
- Add the chicken to the bag or container, ensuring it is fully coated in the marinade. Seal the bag or cover the container.
- Marinate in the refrigerator for at least 30 minutes (up to 4 hours for optimal flavor).
- Preheat your grill to medium-high heat. Make sure the grill grates are clean.
- Remove the chicken from the marinade (discard the marinade). Grill for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C). Look for nice grill marks and ensure the chicken is cooked through.
- Let the chicken rest for 5 minutes before slicing and serving.
