Ingredients:

  • 1.5 lbs (680g) boneless, skinless chicken breasts or thighs
  • 1/4 cup (60ml) extra virgin olive oil
  • 1/4 cup (60ml) fresh lemon juice
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh oregano, chopped (or 1 teaspoon dried oregano)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. In a large resealable bag or container, whisk together olive oil, lemon juice, minced garlic, parsley, oregano, thyme, salt, and pepper.
  2. Add the chicken to the bag or container, ensuring it is fully coated in the marinade. Seal the bag or cover the container.
  3. Marinate in the refrigerator for at least 30 minutes (up to 4 hours for optimal flavor).
  4. Preheat your grill to medium-high heat. Make sure the grill grates are clean.
  5. Remove the chicken from the marinade (discard the marinade). Grill for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C). Look for nice grill marks and ensure the chicken is cooked through.
  6. Let the chicken rest for 5 minutes before slicing and serving.
