- 1 cup water (240 ml)
- 2 tablespoons kosher salt (30 g)
- 2 tablespoons granulated sugar (25 g)
- 2 cups garlic cloves, peeled (about 12-15 whole bulbs)
- 1 teaspoon red pepper flakes (optional, 5 g)
- 1 tablespoon mustard seeds (optional, 15 g)
- 1 tablespoon black peppercorns (optional, 10 g)
Instructions:
- Peel the garlic cloves and set aside.
- Combine vinegar, water, salt, and sugar in a saucepan. Bring to a boil, stirring until salt and sugar dissolve. (Optional) Add red pepper flakes, mustard seeds, and peppercorns to boiling brine.
- Place garlic cloves into the clean jar, packing them tightly. Pour the hot brine over the garlic, ensuring they are completely submerged.
- Allow the jar to cool at room temperature. Seal with the lid and refrigerate for at least 24 hours before using for enhanced flavor.
