Ingredients:

  • 1 cup white vinegar (240 ml)
  • 1 cup water (240 ml)
  • 2 tablespoons kosher salt (30 g)
  • 2 tablespoons granulated sugar (25 g)
  • 2 cups garlic cloves, peeled (about 12-15 whole bulbs)
  • 1 teaspoon red pepper flakes (optional, 5 g)
  • 1 tablespoon mustard seeds (optional, 15 g)
  • 1 tablespoon black peppercorns (optional, 10 g)

Instructions:

  1. Peel the garlic cloves and set aside.
  2. Combine vinegar, water, salt, and sugar in a saucepan. Bring to a boil, stirring until salt and sugar dissolve. (Optional) Add red pepper flakes, mustard seeds, and peppercorns to boiling brine.
  3. Place garlic cloves into the clean jar, packing them tightly. Pour the hot brine over the garlic, ensuring they are completely submerged.
  4. Allow the jar to cool at room temperature. Seal with the lid and refrigerate for at least 24 hours before using for enhanced flavor.
