Ingredients:
- 2 cups water
- 2 cups white vinegar
- ¼ cup granulated sugar
- 2 tablespoons kosher salt
- 2 cloves garlic, peeled and smashed
- 2 teaspoons dill seeds
- 1 teaspoon red pepper flakes
- 1 pound fresh okra, stems trimmed
- 1 tablespoon olive oil (optional)
Instructions:
- In a medium saucepan, combine water, vinegar, sugar, and salt.
- Bring mixture to a gentle boil, stirring until sugar and salt are dissolved.
- Remove from heat and let cool for about 10 minutes.
- In each pint jar, add smashed garlic, dill seeds, and red pepper flakes.
- Pack the trimmed okra into each jar standing upright.
- If using, drizzle with olive oil.
- Carefully pour the cooled brine into each jar, leaving about ½ inch of headspace.
- Wipe rims with a clean cloth to ensure a good seal.
- Seal jars tightly with lids.
- Allow to cool to room temperature, then refrigerate.
- Let the jars sit for at least 24 hours to develop flavor before enjoying!
