Ingredients:

  • 2 cups water
  • 2 cups white vinegar
  • ¼ cup granulated sugar
  • 2 tablespoons kosher salt
  • 2 cloves garlic, peeled and smashed
  • 2 teaspoons dill seeds
  • 1 teaspoon red pepper flakes
  • 1 pound fresh okra, stems trimmed
  • 1 tablespoon olive oil (optional)

Instructions:

  1. In a medium saucepan, combine water, vinegar, sugar, and salt.
  2. Bring mixture to a gentle boil, stirring until sugar and salt are dissolved.
  3. Remove from heat and let cool for about 10 minutes.
  4. In each pint jar, add smashed garlic, dill seeds, and red pepper flakes.
  5. Pack the trimmed okra into each jar standing upright.
  6. If using, drizzle with olive oil.
  7. Carefully pour the cooled brine into each jar, leaving about ½ inch of headspace.
  8. Wipe rims with a clean cloth to ensure a good seal.
  9. Seal jars tightly with lids.
  10. Allow to cool to room temperature, then refrigerate.
  11. Let the jars sit for at least 24 hours to develop flavor before enjoying!
