Ingredients:
- 1 lb (450g) Cooked Mashed Potatoes
- 1/4 cup (30g) All-Purpose Flour, plus extra for dusting
- 1 Large Egg, lightly beaten
- 1/4 cup (25g) Grated Cheddar Cheese (optional)
- Salt and Black Pepper to taste
- 1 lb (450g) Good Quality Pork Sausages (approximately 6-8 sausages)
- Brown Sauce, Tomato Ketchup, or your favourite dipping sauce (optional)
Instructions:
- Preheat the air fryer to 375°F (190°C). Prick the sausages a few times with a fork.
- Place the sausages in the air fryer basket in a single layer. Cook for 8-10 minutes, flipping halfway through, until browned and cooked through (internal temperature of 165°F/74°C).
- While the sausages are cooking, in a large bowl, combine the cooked mashed potatoes, flour, egg, and cheddar cheese (if using). Season with salt and pepper to taste. Mix well until everything is evenly combined.
- Once the sausages are cooked, let them cool slightly. Cut each sausage into bite-sized pieces (about 1-inch/2.5cm chunks).
- Take a spoonful of the mashed potato mixture and flatten it slightly in your palm. Place a piece of sausage in the center and wrap the mashed potato around it to form a ball or nugget shape. Repeat with the remaining ingredients.
- Place the shaped bites in a single layer in the air fryer basket. Cook for 3-5 minutes, or until golden brown and heated through.
- Serve immediately with your favorite dipping sauces.
