Ingredients:

  • 2 large Russet potatoes (about 1 pound/450g total), peeled and cut into ½-inch thick fries
  • 2 tablespoons olive oil (or avocado oil)
  • 1 teaspoon sea salt (or kosher salt), plus more to taste
  • ½ teaspoon garlic powder
  • ¼ teaspoon paprika
  • Freshly ground black pepper, to taste

Instructions:

  1. Peel and cut the potatoes into evenly sized fries. Aim for ½-inch thickness for best results.
  2. Place the cut fries in a large bowl filled with cold water and soak for at least 30 minutes (or up to 2 hours). This removes excess starch and helps them crisp up.
  3. Drain the fries well and pat them completely dry with paper towels. This is crucial for crispiness!
  4. In a large bowl, toss the dried fries with olive oil, salt, garlic powder, paprika, and black pepper. Ensure they are evenly coated.
  5. Preheat your air fryer to 400°F (200°C).
  6. Place the fries in the air fryer basket in a single layer. Don't overcrowd! You may need to cook in batches.
  7. Air fry for 15-20 minutes, flipping halfway through, until golden brown and crispy. Watch them carefully during the last few minutes to prevent burning.
