Ingredients:
- 1 cup (120g) all-purpose flour
- 2 tablespoons (25g) granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon ground cinnamon
- Pinch of salt
- 1 large egg
- 1 cup (240ml) milk
- 2 tablespoons (30ml) melted unsalted butter, cooled slightly
- 1 teaspoon vanilla extract
- 1 ripe banana, mashed
- 1 tablespoon unsalted butter, for greasing the pan
Instructions:
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In a separate bowl, whisk together the egg, milk, melted butter, and vanilla extract. Gently fold in the mashed banana.
- Gradually pour the wet ingredients into the dry ingredients, whisking gently until just combined. A few lumps are okay!
- Heat a lightly greased griddle or skillet over medium heat.
- Pour 1/4 cup of batter onto the hot griddle for each pancake.
- Cook for 2-3 minutes per side, or until golden brown and cooked through.
- Serve hot, with your favorite toppings!
