Ingredients:

  • 1 cup (120g) all-purpose flour
  • 2 tablespoons (25g) granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt
  • 1 large egg
  • 1 cup (240ml) milk
  • 2 tablespoons (30ml) melted unsalted butter, cooled slightly
  • 1 teaspoon vanilla extract
  • 1 ripe banana, mashed
  • 1 tablespoon unsalted butter, for greasing the pan

Instructions:

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  2. In a separate bowl, whisk together the egg, milk, melted butter, and vanilla extract. Gently fold in the mashed banana.
  3. Gradually pour the wet ingredients into the dry ingredients, whisking gently until just combined. A few lumps are okay!
  4. Heat a lightly greased griddle or skillet over medium heat.
  5. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  6. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  7. Serve hot, with your favorite toppings!
