Ingredients:
- 1/2 cup unsalted butter, softened (115g)
- 3/4 cup creamy peanut butter (190g)
- 1 cup brown sugar, packed (200g)
- 1 large egg, room temperature
- 1 tsp vanilla extract (5ml)
- 1 1/2 cups old fashioned rolled oats (150g)
- 1/2 cup all-purpose flour (65g)
- 1/2 tsp baking soda (3g)
- 1/4 tsp salt (1.5g)
- 1 cup semi-sweet chocolate chips (170g)
Instructions:
- Beat the softened butter, peanut butter, and brown sugar on medium-high speed for 2–3 minutes until the mixture is pale and fluffy. Beat in the egg and vanilla until fully emulsified.
- Lower the mixer speed to stir in the flour, baking soda, and salt just until combined. Fold in the rolled oats and chocolate chips by hand using a spatula, stopping as soon as no streaks of flour remain.
- Scoop rounded tablespoons of dough onto parchment-lined baking sheets, spacing them 2 inches apart.
- Bake at 350°F (175°C) for 9–11 minutes. Remove when the edges are golden brown but the centers still look slightly soft.
