Ingredients:

  • 1/2 cup unsalted butter, softened (115g)
  • 3/4 cup creamy peanut butter (190g)
  • 1 cup brown sugar, packed (200g)
  • 1 large egg, room temperature
  • 1 tsp vanilla extract (5ml)
  • 1 1/2 cups old fashioned rolled oats (150g)
  • 1/2 cup all-purpose flour (65g)
  • 1/2 tsp baking soda (3g)
  • 1/4 tsp salt (1.5g)
  • 1 cup semi-sweet chocolate chips (170g)

Instructions:

  1. Beat the softened butter, peanut butter, and brown sugar on medium-high speed for 2–3 minutes until the mixture is pale and fluffy. Beat in the egg and vanilla until fully emulsified.
  2. Lower the mixer speed to stir in the flour, baking soda, and salt just until combined. Fold in the rolled oats and chocolate chips by hand using a spatula, stopping as soon as no streaks of flour remain.
  3. Scoop rounded tablespoons of dough onto parchment-lined baking sheets, spacing them 2 inches apart.
  4. Bake at 350°F (175°C) for 9–11 minutes. Remove when the edges are golden brown but the centers still look slightly soft.
