Ingredients:

  • 2 large sweet potatoes (about 1 ½ lbs / 680g), peeled and cut into ½-inch thick fries
  • 2 tablespoons olive oil (30 ml)
  • 1 teaspoon cornstarch (5 ml)
  • 1/2 teaspoon garlic powder (2.5 ml)
  • 1/2 teaspoon smoked paprika (2.5 ml)
  • 1/4 teaspoon cayenne pepper (optional, 1.25 ml)
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Peel and cut the sweet potatoes into evenly sized fries.
  3. In a large bowl, toss the sweet potato fries with olive oil, cornstarch, garlic powder, smoked paprika, cayenne pepper (if using), salt, and pepper. Ensure fries are evenly coated.
  4. Spread the fries in a single layer on the prepared baking sheet. Avoid overcrowding.
  5. Bake for 25-30 minutes, flipping halfway through, or until golden brown and crispy.
  6. Remove from oven and serve immediately with your favorite dipping sauce.
