Ingredients:
- 4 medium sweet potatoes (about 2 lbs or 900g)
- 3 tablespoons olive oil (45ml)
- 2 teaspoons garlic powder (10g)
- 1 teaspoon smoked paprika (5g)
- ½ teaspoon salt (2.5g)
- ¼ teaspoon black pepper (1g)
- ½ cup grated parmesan cheese (50g)
- 2 tablespoons fresh parsley, chopped (optional)
Instructions:
- Preheat your oven to 425°F (220°C).
- Wash and scrub the sweet potatoes thoroughly. Cut each sweet potato into wedges, about 1-inch thick.
- In a bowl, combine olive oil, garlic powder, smoked paprika, salt, and black pepper. Add sweet potato wedges to the bowl and toss until evenly coated.
- Line a baking sheet with parchment paper (if using) and spread the seasoned wedges in a single layer.
- Roast in the preheated oven for 20 minutes, flipping halfway through for even cooking. Check for doneness; they should be golden brown and tender.
- Remove from oven and immediately sprinkle with parmesan cheese. Return to oven for an additional 5 minutes until cheese is melted and slightly golden.
- Sprinkle with fresh parsley (if using) and serve hot.
