Ingredients:

  • 4 medium sweet potatoes (about 2 lbs or 900g)
  • 3 tablespoons olive oil (45ml)
  • 2 teaspoons garlic powder (10g)
  • 1 teaspoon smoked paprika (5g)
  • ½ teaspoon salt (2.5g)
  • ¼ teaspoon black pepper (1g)
  • ½ cup grated parmesan cheese (50g)
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. Wash and scrub the sweet potatoes thoroughly. Cut each sweet potato into wedges, about 1-inch thick.
  3. In a bowl, combine olive oil, garlic powder, smoked paprika, salt, and black pepper. Add sweet potato wedges to the bowl and toss until evenly coated.
  4. Line a baking sheet with parchment paper (if using) and spread the seasoned wedges in a single layer.
  5. Roast in the preheated oven for 20 minutes, flipping halfway through for even cooking. Check for doneness; they should be golden brown and tender.
  6. Remove from oven and immediately sprinkle with parmesan cheese. Return to oven for an additional 5 minutes until cheese is melted and slightly golden.
  7. Sprinkle with fresh parsley (if using) and serve hot.
