Ingredients:

  • 2 oz (60 ml) dark rum
  • 1 oz (30 ml) fresh lime juice
  • ¾ oz (22.5 ml) simple syrup (1 part sugar to 1 part water)
  • 3 dashes Elemakule Tiki Bitters
  • 1 oz (30 ml) pineapple juice
  • Crushed ice
  • Pineapple wedge and cherry, for garnish (optional)
  • Fresh mint sprig (optional)
  • Grated nutmeg, for dusting (optional)

Instructions:

  1. Prepare Simple Syrup: If you dont have simple syrup on hand, combine equal parts sugar and water in a small saucepan over low heat. Stir until the sugar completely dissolves. Allow to cool before using.
  2. Mix Ingredients: In a shaker, combine the dark rum, fresh lime juice, simple syrup, pineapple juice, and Elemakule Tiki Bitters.
  3. Shake It Up: Fill the shaker with crushed ice and secure the lid. Shake vigorously for about 15-20 seconds until well chilled.
  4. Strain and Serve: Fill a tall glass (such as a tiki mug or a highball glass) with crushed ice. Strain the mixture from the shaker over the crushed ice.
  5. Garnish: Garnish with a pineapple wedge, cherry, and a mint sprig. For an extra touch, grating a little nutmeg over the top can enhance the aroma.
  6. Enjoy: Serve immediately with a straw or a stir stick for mixing.
