Ingredients:
- 1.5 lbs (680g) Sirloin steak, cut into 1-inch cubes
- 1 tablespoon (15ml) Olive oil
- 1 teaspoon (5g) Sea salt
- 1/2 teaspoon (2.5g) Black pepper
- 1/4 teaspoon (1.25g) Garlic powder (optional)
- 4 tablespoons (57g) Unsalted butter
- 4 cloves Garlic, minced
- 1 tablespoon (15ml) Fresh parsley, chopped (or 1 teaspoon dried)
- 1 teaspoon (5ml) Fresh thyme leaves (or 1/2 teaspoon dried)
- 1/4 teaspoon (1.25g) Red pepper flakes (optional, for a bit of a kick)
Instructions:
- Pat the steak cubes dry with paper towels. Toss with olive oil, salt, pepper, and garlic powder (if using) in a mixing bowl.
- Heat the cast iron skillet over high heat until smoking hot. Add the steak bites in a single layer (work in batches if necessary to avoid overcrowding the pan). Sear for 1-2 minutes per side for medium-rare, adjusting cooking time to your desired doneness.
- Remove the steak bites from the skillet and set aside. Reduce heat to medium. Add the butter to the skillet and let it melt. Add the minced garlic and red pepper flakes (if using) and sauté for about 30 seconds, until fragrant.
- Add the parsley and thyme to the garlic butter sauce. Return the steak bites to the skillet and toss to coat evenly in the sauce. Cook for another minute or two to heat through.
- Serve the steak bites hot, garnished with extra fresh parsley, if desired.
