Ingredients:

  • 2 lbs (900g) chicken wings, drumettes and wingettes separated
  • 1 tbsp (15 ml) vegetable oil
  • 1/2 tsp (2.5 ml) salt
  • 1/4 tsp (1.25 ml) black pepper
  • 1/4 cup (60 ml) Gochujang (Korean chili paste)
  • 2 tbsp (30 ml) soy sauce
  • 2 tbsp (30 ml) rice vinegar
  • 1 tbsp (15 ml) honey or maple syrup
  • 1 tbsp (15 ml) sesame oil
  • 2 cloves garlic, minced
  • 1 tsp (5 ml) grated ginger
  • 1/2 tsp (2.5 ml) red pepper flakes (optional, for extra heat)
  • 1 tbsp (15 ml) Gochujang (Korean chili paste) - for glaze
  • 1 tbsp (15 ml) honey or maple syrup - for glaze
  • 1 tsp (5 ml) sesame oil - for glaze
  • 1/2 tsp (2.5 ml) rice vinegar - for glaze
  • Sesame seeds (optional)
  • Chopped green onions (optional)

Instructions:

  1. Pat the chicken wings dry with paper towels. Toss with vegetable oil, salt, and pepper.
  2. In a large bowl, whisk together the Gochujang, soy sauce, rice vinegar, honey/maple syrup, sesame oil, minced garlic, grated ginger, and red pepper flakes (if using).
  3. Add the wings to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, or ideally overnight, turning occasionally.
  4. Preheat the air fryer to 380°F (190°C).
  5. Arrange the marinated wings in a single layer in the air fryer basket, being careful not to overcrowd. Air fry for 10 minutes, then flip the wings. Continue to air fry for another 10-15 minutes, or until the internal temperature reaches 165°F (74°C) and the wings are golden brown and crispy.
  6. While the wings are air frying, prepare the glaze. In a small saucepan or microwave-safe bowl, whisk together the Gochujang, honey/maple syrup, sesame oil, and rice vinegar. Gently heat until slightly warmed and the ingredients are combined.
  7. Once the wings are cooked, remove them from the air fryer and brush generously with the prepared glaze.
  8. For extra stickiness and caramelized flavor, return the glazed wings to the air fryer for 2-3 minutes. Watch carefully to prevent burning.
  9. Garnish the wings with sesame seeds and chopped green onions (if using). Serve immediately.
